What makes a person who they are? Their morals, their beliefs, their uniqueness…?
Can you identify the certain moments in a persons life that made them who they are?
If so then can it be repeated with others, so the beneficial traits are passed down to others?

Depends on the characteristic.
Every one has, as measured, so many percent genetics, so many percent nurture and so many mistake measuring faults or unknown cause. So the soul could be part of the last category, or that could be individual nurture (each kid gets treated just a little bit differently). That last category is usually quite big, like 30-40 %.
Also, genetics will play a bigger role as you get older.
